Pumpkin Spice Coffee Creamer

Save yourself a few hundred calories and 25 sugar grams while enjoying a pumpkin-spiced coffee anytime you want without the use of your Starbucks app. It takes 5 minutes and makes 3 cups. It can hang out in the fridge for a couple weeks, but mine never lasts that long!


Ingredients:

1 can coconut milk (full fat)

1 1/4 cup of nut milk or dairy milk

1/4 c. pumpkin puree

1 1/2 t. pumpkin spice

5 T. maple syrup

1 T. vanilla






Directions:

  1. Mix all ingredients into a small saucepan.

  2. Cook over low heat until the mix starts to steam. Do not bring it to a boil.

  3. Let cool for 15 to 20 mins.

  4. Pour through a fine mesh sieve and store in a glass container in the fridge.

  5. Take out and shake or stir before enjoying cold or hot coffee.

  6. Enjoy! (note if coconut milk is hard, just let it sit on the counter for a little bit and stir in. The coconut fat gives the coffee a rich and full flavor)
