Pumpkin Pancakes

Pumpkin, almonds, and a little maple syrup will make your next breakfast a hit! The highlight: you don't need the maple syrup dunk. A little almond butter drizzle and breakfast is served! Makes 12 pancakes; serves 4 people



Ingredients:

4 eggs

3/4 c. pumpkin

1 c. almond milk

1 t. vanilla

2 T. pure maple syrup

1 c. almond flour

2 t. baking powder

1/4 t. salt

1/2 t. cinnamon

avocado oil or butter for pan



Directions:

  1. Mix eggs well and add pumpkin, almond milk, vanilla, and maple syrup.

  2. Stir in flour and spices.

  3. Warm skillet over medium heat.

  4. Add avocado oil/butter and turn heat to medium low.

  5. Cook pancakes until lightly brown on both sides.

  6. Serve with almond butter.
