This cookie is loaded with so many extras, you won't even miss the flour. The challenge is eating only one!

Ingredients:
2 3/4 c old fashioned oats
1/2 c. brown sugar
1 T. vanilla
1 t. baking soda
1/2 t. salt
1/2 t. cinnamon
2 eggs
1/2 c. melted coconut oil
2 mashed bananas
12 medjool dates, finely chopped
10 oz. dark chocolate chips (60% cocoa or more)
2/3 c. sweetened coconut shreds
1/4 c. pumpkin seeds
Directions:
1. Heat oven to 350. Cover cookie sheet with parchment paper. 2. In a large bowl, mix oats through the bananas until well incorporated. 3. Stir in dates, chocolate chips, coconut and pumpkin seeds.
4. Scoop 2 T. size cookies onto cookie sheet. 5. Bake for 10 to 12 minutes. Don't over bake. Let cool on parchment paper on counter. 6. Can be frozen or stored in airtight container for 4 days. 7. Makes 24 to 30 cookies.
