Pumpkin Chia Parfait

Chia seed pudding, pumpkin, yogurt, and granola. A fun breakfast that can be made ahead and taken on the go for those crazy mornings!


Chia Seed Pudding:

1/3 c. chia seeds

1 1/2 c. plant based milk

1 1/2 t. vanilla

dash salt

2 T. pure maple syrup


2 T. pumpkin

1/2 c. plain yogurt of your choice

sprinkle of pumpkin pie spice

2 T. homemade granola or store bought


  1. Make chia seed pudding ahead of time

Mix all ingredients for chia seed pudding ahead of time; stir in 30 minutes, and let sit for 3 hours in fridge to set.

2. Mix yogurt, pumpkin, and pumpkin pie spice

3. Layer yogurt mixture, chia seed pudding, yogurt, chia seeds, and granola.

*you can replace granola with sliced almonds, pumpkin seeds, or pomegranates anvils*
