Coconut Granola

Crunchy granola made with coconut oil and honey! Industrial oils be gone, and healthy fats for the win! Add to yogurt, eat as a snack or pre workout energy.


2 c. Oats

1/2 c. Shredded unsweetened or sweetened coconut (your preference)

1/2 c. Chopped walnuts, pecans, or almonds

1/4 c. Raw Pumpkin seeds

2 T. Flax seeds

1/4 t. Cinnamon

Dash of salt

1/4 c. Coconut oil

1/4 c. + 2 T. Honey


  • Preheat oven to 300 and line jelly roll pan with parchment paper.

  • In a large bowl mix oats, nuts, seeds, and dry spices.

  • In a small separate microwavable bowl, melt coconut oil in microwave roughly 30 seconds then add honey and vanilla. Stir until well combined.

  • Add oil mixture to oats and stir to combine.

  • Pour into prepared pan and spread out evenly.

  • Bake for 30 to 40 mins or until lightly brown.

  • Let cool completely before breaking apart into chunks.

  • Chocolate chips, dried fruit, or other nuts may be added after. Store in airtight container.

  • Can be kept in pantry for 1 to 2 weeks, and freezer for 2 months.
