Crunchy granola made with coconut oil and honey! Industrial oils be gone, and healthy fats for the win! Add to yogurt, eat as a snack or pre workout energy.
2 c. Oats
1/2 c. Shredded unsweetened or sweetened coconut (your preference)
1/2 c. Chopped walnuts, pecans, or almonds
1/4 c. Raw Pumpkin seeds
2 T. Flax seeds
1/4 t. Cinnamon
Dash of salt
1/4 c. Coconut oil
1/4 c. + 2 T. Honey
Preheat oven to 300 and line jelly roll pan with parchment paper.
In a large bowl mix oats, nuts, seeds, and dry spices.
In a small separate microwavable bowl, melt coconut oil in microwave roughly 30 seconds then add honey and vanilla. Stir until well combined.
Add oil mixture to oats and stir to combine.
Pour into prepared pan and spread out evenly.
Bake for 30 to 40 mins or until lightly brown.
Let cool completely before breaking apart into chunks.
Chocolate chips, dried fruit, or other nuts may be added after. Store in airtight container.
Can be kept in pantry for 1 to 2 weeks, and freezer for 2 months.
