Brownie Bites

Heavenly goodness in a bite size morsel. You will never know they are gluten or diary free. A gooey brownie filled center with a chocolate coating. My chocolate lovers heart is in heaven! The versatility is endless, dark chocolate or milk chocolate, sea salt, caramel, coconut, candy canes, sprinkles, nuts, etc.

Easy hack: You can use a box mix for the brownies if desired.


Ingredients for Brownies:

3/4 c. gluten free flour

1/2 t. baking soda

1/2 t. salt

1/2 c. cocoa powder

1/2 c. melted coconut oil

2 eggs

3/4 c. sugar

1/2 c. brown sugar

1 T. pure vanilla extract



Coating:

Dark chocolate, milk chocolate, or white chocolate

Coconut oil

Shredded coconut, chopped nuts, crushed candy canes, sprinkles, etc.


Directions for Brownies:

  1. Preheat oven to 350. Grease an 8 x 8 pan with coconut oil or line with parchment paper.

  2. In a large bowl, melt coconut oil in the microwave.

  3. Add sugars, vanilla and eggs to oil. Stir well until eggs are incorporated.

  4. In a separate bowl, mix flour, cocoa, salt, and baking soda.

  5. Pour flour mixture into the wet ingredients and stir until well incorporated.

  6. Bake for 30 to 35 mins until toothpick inserted in the center is clean.

  7. Let cool.

How to make the brownie bites:

  1. Cool brownies completely. Cool in fridge for 30 mins to 1 hour. This step makes it easier to roll brownies into balls.

  2. Using a 1 T or 2 T. scoop, roll brownies into balls with your hands.

  3. Place on a separate plate and place in fridge for 30 mins.

  4. In a small bowl melt 1 c. chocolate chips with 1 T. coconut oil.

  5. Dip brownies into melted chocolate and place on parchment lined sheet.

  6. Add toppings before chocolate sets and pop back in the fridge for 20 or until chocolate is set.

  7. Enjoy....these go so fast, making 2 or 3 batches is standard at this house!

  8. Store in the fridge until ready to eat and enjoy!!
