Sweet Potatoes and Sausage Bake

Cook once, eat twice. Dinner and breakfast are served!


2 sweet potatoes chopped

1 green pepper chopped

1 red onion chopped

1 T. minced garlic

12 oz chicken sausage (minimally processed)

3 T. avocado oil

salt and pepper to taste


  • Heat oven to 400 degrees

  • Combine vegetables and sausage in a 9 x 13 baking pan.

  • Drizzle with olive oil, salt, and pepper.

  • Stir all ingredients together and bake for 40 mins.

Add a simple salad and dinner is served.

This is a great meal for breakfast with 2 sunny side eggs! What more can you ask for?
