Sweet potatoes do not have to make an appearance only at Thanksgiving. This recipe is a family favorite and can even be served at breakfast with some turkey sausage and soft eggs. The sweet and spicy combo is a sure fire win.
4 Sweet potatoes
1/4 c. Maple syrup 1/2 t. Cinnamon 1/2 t. Nutmeg
1/4 t. Dash of salt
2 t. Vanilla 2 T. Melted butter
1/3 c. Toasted pecans
Directions:
1. Place quartered unpeeled sweet potatoes in steamer basket. Steam for 15-20 minutes or until soft. 2. Remove sweet potatoes from the basket and let cool slightly. 3. Remove potato skins and mash or mix in the mixer. 4. Add all other ingredients and mix thoroughly.
5. Bake in 350 oven for 20 minutes. 6. Add toasted pecans on top to serve.
