Perfect marinade to make "at home fajitas" that taste like you were eating out. They are that good....promise! This recipe will become a weekly staple.
Ingredients
3/4 cup beer
1 medium sweet onion, chopped
3 cloves garlic
1 chipotle chili pepper in adobo sauce
2 T. olive oil
1 Medium lime juiced
1 tablespoon adobo sauce
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds boneless, skinless chicken thighs, or chicken breasts or strip steak
1 onion sliced
1 red pepper sliced
1 orange pepper sliced
1 yellow pepper sliced
1 jalapeno, seeded and diced
Directions:
Mix marinade ingredients together, from beer to pepper, in a glass bowl or blender. Pulse marinade with blender or immersion blender until ingredients are thoroughly mixed. ** I have been lazy and just used the marinade with out blending...it can work in a pinch **
Place meat in ziplock bag or glass container and pour marinade over top.
Place meat in fridge and let marinade for 4 hours to 24 hours.
Remove meat from marinade and grill or cook in a cast iron skillet over medium heat until meat reaches desired internal temperature.
Remove meat from heat and let sit while cooking peppers.
Add peppers and onions to cast iron or grill pan.
Cook until vegetables are tender.
Cut meat into strips, stir back in veggies.
Serve in a rice bowl, as a fajita, in a taco shell or on a salad.
