Chicken Pesto Soup

Chicken soup is good for the soul and your immune system too! Try this delicious soup with pesto and rosemary. We are can all use a little warm up from the inside out....


1 T. olive oil 5 cloves of garlic 1 red onion chopped 2 chopped carrots 2 stalks celery chopped

1 sweet potato chopped

1 pound chicken 4 c. chicken broth 2 c. water 1 can white cannelini beans

3/4 t. dried rosemary 3 T. pesto


1. Heat oil over medium heat in a dutch oven or medium size pot. 2. Add chopped garlic and onion and saute until soften. 3. Stir in chicken and cook for 5 to 8 mins until cooked.

4. Add chicken broth and water and bring to a boil. 5. Stir in sweet potato, carrots, and rosemary. 6. Slowly boil for roughly 10 mins until carrots and sweet potatoes soften. 7. Stir in pesto and simmer for 10 mins. 8. Can be served with feta, Parmesan, or whole seed crackers.
